Day 66 in Pennsylvania. We carried on looking round today and we saw some more cool bits and bobs. So, here are some more photos. We found out that until Philly used to be the capital of the USA and also we found out that this city rocks!! This place just feels important. Impeccably clean, expensive and full of monuments and statues and gorgeous parks.

We did a lot of exploring here, getting to most of the main tourist spots and some of the less touristy bits too. We really liked this place and would definitely visit again. Really cool. Make sure that the griddle is at the desired temperature. Just add a tablespoon of oil and lightly cover the griddle.

Use a paper towel to spread the oil and cover the entire griddle. One tip that is most important for fluffy pancakes is not to overmix the batter. You want to stir the batter by hand. The lumps in the batter is what helps make the fluffiest pancakes. After gently stirring the wet ingredients into the flour mixture, you will notice lumps and that is exactly what you want.

Let the batter rest while the griddle is heating up. This ensures the best tasting pancakes. One of my favorite ways to serve pancakes hot off the griddle is to add lots of room temperature butter and then pour hot syrup over the top. This helps the butter melt and creates a even better tasting pancake that keeps them warm.

Pouring cold syrup is good but warming up the syrup is so much better. Give it a try. Blueberries Pancakes — blueberries are a favorite fruit to add to pancakes or any dessert really.

Rinse them well, let them dry before adding them to the top of the pancake batter after it has been placed on the griddle. Chocolate Chip Pancakes — Making chocolate chip pancakes is super easy and a favorite among chocolate lovers. All you need to do is add chocolate chips to the pancake batter after being place on the griddle and then cook as usual. Banana Pancakes — bananas are a delicious addition to change up the flavor of the standard pancake recipe.

Simply add a ripe, mashed banana directly to the batter and follow the below instructions. Fresh Fruit — Sliced strawberries, blueberries , raspberries , blackberries and sliced bananas are delicious additions to add to the top of pancakes. Homemade Whipped Cream — All you need to make homemade whipped cream is heavy whipping cream, sugar and vanilla extract.

Add the ingredients to a medium bowl and beat on high until stiff peaks form. We are going to be exploring lots in the next few days so lots of pics to come. We decided to check out a bit more of New England before heading south again. So we are just chilling out for a few days, recharging our batteries before heading to NYC, to smash it, on Wednesday. This town is small but very nice, good places to eat, nice places to walk and very nice locals. We continued our walk through of the city and found a few more cool bits.

We continued our exploring these few days and got some more pics. So here they are. After a ridiculously long journey Portland was a sight for sore eyes. A gorgeous little place, full of charming independent shops, amazing seafood restaurants and walking trails. I kind of forgot how amazingly delicious these frozen treats actually are until I had kids and started buying them again.

There is something so fresh and refreshing about lemon. Lemon smells, lemon water, lemonade, and my personal favorite: these homemade lemon crepes. These beauties are made with a zesty mascarpone-cottage cheese filling and then they are topped with a homemade lemon curd for a sweet taste of citrus in every bite.
